The priority task of the milk processing industry is in reducing specific energy consumption fat dispersion while simultaneously ensuring a high emulsion. One possible ways to solve this problem by developing and implementing little-studied jet homogenizer slot type. In it, homogenization occurs method separate feeding cream, which allows creating maximum difference between speeds skim necessary condition for effective dispersion.
